Vegetable Soup
1 Litre chicken stock
2 Carrots, chopped
2 Sticks celery, chopped
Onion, chopped
400g Tomatoes
Quarter of a cup basil
Quarter of a cup chopped curly parsley
Tablespoon rosemary
Method:
In a large saucepan bring the chicken stock to the boil and add carrots, celery, onion and tomatoes. Simmer for 30 minutes then blend. Add in the herbs and season to taste.
