Fennel and Orange Salad
Pick 2 baby fennels, slice then finely dice
4 Tablespoons oil
Salt and pepper
1 Teaspoon Dijon mustard
2 Tablespoons balsamic vinegar
2 Oranges, segmented
3 Tablespoons crushed walnuts
Fresh parsley
Handful of black olives.
Method:
Combine all the ingredients, toss well and serve immediately.
