Bluegum Limes is a small operation on a bushland property at Mooneba 15 kilometres west of Kempsey in the Macleay Valley on the Mid North Coast.

We are at the Newcastle Farmers Market on a monthly basis. We grow mainly lime trees and make products that are lime-based.

Some of our other fruit trees on Bluegum Limes Farm include mandarin, orange, grapefruit, cumquat, guava and Davidson plum. The trees are sprayed only with white oil to control scale and sooty mould. Before harvesting nothing else is touching the fruit except sunshine and rain.

Most of the fruits are juiced to make Lime Cordial. The other cordials made by Bluegum Limes have a small percentage of lime added to provide for an appealing and interesting blend.

For the past four years Andrew Sippel and David Strudwick have been capturing the original taste of the outback with Drover’s Choice Saltbush Lamb. In 2004 the two Western plains farmers came together and started the business in Coonamble, NSW.

Over the years Drover’s Choice have perfected their very special meat ensuring it’s original taste of the outback is brought to you every time in the full flavoured, tender and succulent taste of saltbush lamb.

Old Man Saltbush is a native plant with a rich source of minerals and nutrients. This deep rooted perennial plant assists with sustainable land management, agriculture production and helps prevent salinity and aridity.

Old Man Saltbush is environmentally sustainable which guarantee the lambs are able to be fed this plant all year round regardless of weather conditions.

To ensure a consistent eating quality, the Saltbush meats have established a special finishing property at Coonamble where they have perfected the saltbush lamb grazing techniques.

All the saltbush meat is chemical free and the sheep graze in paddocks planted with old man saltbush along with scattered mature trees and consistent tough lasting grass. The native plains can survive the toughest environment which keeps the stock healthy and happy.

The lamb gets taken to the butchers just a short way away at Narromine where the meat is cut into its best prime quality all year round.

Fosterton Farm is situated in the beautiful Fosterton Valley, just out of Dungog on the Williams River.

The farm produces biodynamic/organic food which is grown and produced taking care of the land, the animals and the environment. We also have self-contained visitor accommodation.

At our stall you will find biodynamic sourdough bread, along with a range of sweet and savoury pastries. Fosterton Farm also mills a range of biodynamic/organic flour, biodynamic beef, lucerne and grass hay and we have chooks for eggs, grow vegetables and herbs and have some fruit and nut trees and beehives, produce which is used in the bakery.

Fosterton Farm Bakery was established in 2002 to service the Newcastle area and later moved to the farm at Fosterton where the bakery was custom built to suit our level of production.

The first priority has always been the quality of the product. We are continuously striving to improve the nutrition, taste and appearance of what we make with better ingredients, methods or equipment. Therefore, our expansion has always been slow and considered - quality maintained and built on, rather than the wasteful practice of flooding the market with bread.

We are blessed by the unique location for the bakery. Overlooking the river flats with good clean air and plenty of fresh clean rainwater, we believe this adds to the subtle taste or energy in our products.

We are conscious that we live in a world of misplaced and dwindling resources, so it is vital that we are responsible and ethical in our business practices. Living on a farm makes it easy to recycle our waste. Animals and chickens eat leftovers and scraps, water runs off into the orchard. We grow the vegetables, eggs and meat for our savoury pastries and are supplied with some biodynamic dairy products from a neighbour's cow.

The grain we prefer to purchase from Demeter Biodynamic Farm on the Breeza Plains 3 hours west of here. The quality of their grain grown sustainably on rich volcanic soils is first class. It is our conviction that by being a part of and supporting biodynamic/organic growers and suppliers we are contributing to a more ethical and equitable food supply chain for those who are interested in making a change.

Our farm is at Peats Ridge on the Central Coast, 20 minutes away from the Entrance. We both have lived on vegetable farms all our life helping our parents and now giving our kids the same chance.

The farm is on 37 acres we also live on the farm we are Freshcare Certified meaning we use less chemicals on our produce.

Our children Adam, Johnathon and Rachel are involved from growing , harvesting to selling the produce. We believe in having the children learning every thing about the farming life because it will always be there in the future for them.
The farm has eight glass houses where we can grow vegetables out of season.
We also grow our vegetables from our own seedlings. Outside we grow vegetables and also have 300 navel orange trees that grow without any chemicals treatments.
There are 5000 strawberries plants in the glass houses so when it rains the strawberries won't rot and still be tasty and sweet.

We started taking interest in selling at farmers markets because we wanted the customers to have fresh local produce that is only picked the day before.

The Happy Hen farm is just outside Crescent Head and the 4000 free range hens have 290 acres.

Starting with 500 laying hens, the business has been built up as demand grew for the farm-laid eggs.

All the chickens are antibiotic and hormone-free and the chickens have access to paddocks of grass, dirt to dig in and plenty of protection from the elements.

The 'girls' have access to food and water when they want it.

The Happy Hen is a family run business and can be found in the Cattle Pavilion every Sunday.

Nick and Judy Hilverda moved from Melbourne to the Manning Valley 14 years ago and started growing proteas, waratahs and pecans on their 240 acre property.

At first Hillview Proteas had 60 protea trees and 200 pecans but now there are more than 20 different varieties of proteas and more than 1000 proteas plants.

Nick and Judy can be found most Sundays at the Markets.

Marrook Farm is at the markets on the first and third Sundays of each month selling their hard cheese, fetta cheese and yoghurt products.

Farmers Heidi and David Marks have been using the traditional methods of Biodynamic farming for more than 20 years and have become concerned about deregulation of the diary industry, and the decline of food quality.

Four years ago, they started Marrook Farm, producing yoghurt, fetta cheese and quark.

“We don't homogenise because we believe it affects the milk, we do not add milk powder or solids, nor do we drain the whey off, so we are pretty old fashioned in that regard," David said.

"For instance, commercial yoghurt – makers add solids so there aren't any inconsistencies in the milk.  But last week we had a lot of rain so the cows got stressed and the milk was a bit runnier, so what if its runnier if it is still tastes great and the quality is there? That’s the sign of a true artisan”

Mill Creek Vineyard nestles between Peppers Mountain and the clean waters of Mill Creek 10 kms north of Stroud in the Hunter Valley. The 5 acre vineyard sits on a perfect North facing hill on volcanic and loam soils. Here the days are warm and importantly the nights are cool. It has fully developed Shiraz and developing Semillon and Sauvignon Blanc vines producing a range of different wines.

Mill Creek Vineyard was begun in 1997 by myself (Helen Gillard) and my family Jon, Josephine and Ben Springthorpe.

Our first vintage was in 2002 and our wines have already won recognition by discerning wine lovers.

My philosophy is to grow grapes myself using meticulous canopy management and make wine as naturally as possible and only when the vintage is good using the magic of winemakers Rhys Eather (Hunter Valley) and John Cassegrain (Hastings Valley).

The orchard was planted in the year 2000, so it is by any standard a young orchard. Our intention was to maintain the traditional use of the land and a link to the heritage of the area. Also to satisfy our need to produce something of value from our farm.

We employ organic farming practices, but the orchard is not certified. The costs makes this impractical for a small orchard.

All the work in the orchard is undertaken by family members including Bazza the farm dog.

Our approach has been to market the orchard output directly to the public. This improves the returns to us as the grower and the cost effective product to you as the consumer. We take pride in the freshness and quality of the product that we provide for you to take home to the family which is often picked on the day of purchase.

Over the Moon Milk

The Over the Moon range of milk and other dairy products reflect the passion and commitment founders Cathie and Karl Johnson have to providing fresh produce to customers. The milk is pasteurised and bottled in the old-fashioned way, one small batch at a time, and is not mixed with milk from other dairies.

The milk can be traced to Ian and Sue Lindsay's dairy farm. Their herd of Jersey cows are grass fed on the lush pastures of the Hastings Valley (near Wauchope) – there, cows eat real grass. They make real milk like nature intended – rich, full-flavoured and creamy.

You will find Karl and his team selling full cream and reduced fat dairy milk at every market, along with other dairy products including flavoured milk, yogurt, cream, and many more.

Oysters Direct produces Sydney Rock Oysters. Naturally organic, premium quality and single seed.

Established in 2001 Rainbow Mushrooms nestles in the quiet hills of Rainbow Flat surrounded by the bustling mid north coast towns of Taree, Nabiac and Forster.

Here we grow the delicious white Agaricus and harvest at the various stages of their growth to suit the local market.

A niche market has been established locally and in Sydney for our speciality, the gourmet Swiss Brown buttons and Portebellos.

To ensure our business and product is of the highest standard each year we are assessed by International Certifications and found to comply with the requirements of Safe Food Warranty Food Safety (HAACP) Management Standard.

As a small rural business we operate with a staff of eleven and distribute our mushrooms daily to the local retailers and travel to Sydney three to four times a week.

Red Belly Gourmet is situated at Copeland in the foothills of the Barrington Tops. Our farm based food business commenced in 2003. We are fully certified organic with the Organic Growers of Australia (OGA). We specialise in a range of condiments where the ingredients are grown, hand made, bottled and labelled all on farm by chef Craig Kingston and his wife Ann Smith.

Wholesale Nursery and Protea Farm

The Propagators wholesale nursery and protea farm is a family run business at Brandy Hill, 15 minutes from Maitland. We have been operating our nursery for nearly 10 years and our protea plantation was planted 8 years ago.

We have more than 100 varieties of proteas, lucadendrons and lucaspermum planted and more than 4000 protea plants are are starting to add new varieties. We grow a large range of plants from vegetable seedlings, natives, shrubs, ground covers, wind breaks, large range of fruit and nut trees, deciduous and ornamental trees as well as protea plants.

A father and son operation, we bring a huge range of plants to the markets every weekend, most at wholesale prices. As we are a wholesaler we are not a 9-5 nursery, but you’re welcome to come out to our nursery by prior arrangement, as we are a fully operational wholesale business.

Terry Barton and his wife Kerry have a small certified organic farm called Tilligerry Organic Produce, which is located on the Tilligerry Peninsula, Lemon Tree Passage.
Previously Terry worked at a nursery and, after spraying roses with chemical spray; found himself severely ill, almost requiring hospitalisation. Following this experience, Terry began growing organically for himself in 1998; he also joined the seed savers network. After finding that Greenpatch were short of broccoli seeds one year, Terry made one of his first sales – 1kg of seeds. The seed was sown, that has grown into a labour of love.
Tilligerry Farm covers an area of about 6 acres which is all fully certified with the Organic Growers Association (OGA). Terry estimates that all of their growing is done on approximately 1.5 acres of plots – the rest of the land being used for the house, chook and duck areas, buffer zones, horse paddocks and a newly planted orchard. Recently you may have enjoyed Terry and Kerry’s superb lettuces, cabbages or herbs such as coriander and rocket. On a recent visit I was able to get a hint of what was to come; garlic (beautiful looking Giant Russian), carrots, shallots, tomatoes, zucchini, parsley, basil, potatoes, capsicums, both jap and butternut pumpkins, beans, cucumbers, rhubarb (by far largest I’ve seen), rockmelons and watermelon.
Special mention should be made of the watermelons, which have something a bit secretive, mystical and very special about them. Terry has made me promise not to reveal his secret, but they will be beautiful, original champagne watermelons. Terry and Kerry are very passionate and extremely dedicated to what they are doing. It’s a two person operation and their day can start anywhere between 3:30 and 4:30 am and finish between 9:00 and 10:00 pm. If they’re earning $5 an hour, they’re happy. Terry estimates that they spend 30 - 40 hours a week weeding – a job that on a conventional farm would take a fraction of the time with a squirt of Round-Up. That’s what Terry says it’s all about – time. To farm organically is very time consuming; building life in the soil and maintaining the biodiversity all takes time. Terry proudly shows me how sandy the soil was before they started farming there, and then what it is like now – dark, rich and full of life!
So why is organic food so expensive?
Terry believes that conventionally farmed food is too cheap; to farm conventionally means to cut costs wherever possible no matter what the consequences, in the long term. He doesn’t necessarily see this as the fault of the farmer – more a fault of the system they’re trying to survive within.
“After all,” he says, “the Minister for Primary Industries has been quoted as saying the only label that matters on food is the price.”
What does Terry see for the future of Organics? He is concerned about the industry not being able to maintain it’s principles as it grows, attracting the wrong sort of players that may not necessarily be faithful or committed to the original organic principles.
